Aurélien is an extremely talented winemaker who established his own estate in 2008. Aurélien focuses on the vineyards and follows organic principles, in the footsteps of his father who was one of the pioneers of organic viticulture in Burgundy. His wines are all about freshness and pure crystalline fruit.In the cellar, the vinification is 100% whole cluster, while he presses as gently as possible, employing indigenous yeasts and not using sulphur.
