Tasting Notes

The chalk and kimmeridgian clay of the site definitely play their part here. This has a wonderful mineral nose with hints of seashell and pebbles. The site is high up on the hill and fully benefits from the suns rays so the fruit is ripe and luscious. Loads of lemon zest, white stone fruit and gingery spice complement the ozone edge on the nose. In the mouth there is delicacy and elegance, with the minerality providing a lacy filigree of corsetry and the fruit and spice and acidity flowing between. It is utterly delightful. The finish is extremely long and pretty with a silvery mercurial flourish. Drink 2016-2022.

William Fèvre is one of Chablis's most respected domaines and is credited with putting this region of Chardonnay vines, WIlliam began purchasing parcels of the region's Premier and Grand Cru vineyards that had fallen out of fashion. He quickly grew the estate to an impressive 50 hectares and established a fine reputation for his white Burgundy. He retired in 1998 and sold the estate to négociant Bouchard, who installed Didier Séguier as winemaker. See More

The aromatics are at the grapefruit end of the citric spectrum. On the palate, the wine feels tender and delicate at first but it builds in the mouth and then shows clear intensity on the finish, giving a real saline burst. Another one that is asking for time.
